Yoshoku

洋食

After opening its borders in the 1850s, Japan suddenly had an entire world of foods to experience. Over the following decades, yoshoku—"Western cuisine”—evolved, combining foreign dishes with Japanese techniques and flavors. Popular dishes include hamburg steak (a large ground beef patty, served without a bun), omurice (omelette filled with ketchup-seasoned rice) and hayashi rice (hashed beef in a demi-glace sauce with rice).
