Yokan

羊羮

Yokan is a traditional Japanese sweet made by adding agar (a gelling agent) to azuki (sweet red bean paste) so it can set into a specific shape. Nikko’s yokan is said to have been created originally as a gift for the city’s shrines and temples, after which it became a popular souvenir for pilgrims. It’s known for being particularly smooth, with a moderate sweetness.
