Washoku (traditional Japanese cuisine) gained UNESCO Intangible Cultural Heritage status in 2014, and kaiseki ryori is its most sophisticated expression. Sumptuous, multi-course kaiseki meals are served at ryokan, hotels and ryotei (Japanese-style restaurants). Kaiseki uses complex techniques to bring out the delicate flavor of each seasonal ingredient and appeal to all five senses.
